Vegetable Pakora

Ingredients –

  • Chopped onions – 1kg
  • Chopped potatoes -400gms
  • Chopped spinach -200gms
  • Ginger and garlic paste – 1 teaspoon
  • Salt – to taste
  • Red chilli powder – 1 teaspoon
  • Roasted cumin seeds – 1 teaspoon
  • Dry Coriander – 1 teaspoon
  • Lemon juice – of 1 whole lemon
  • Gram flour – 400gms
  • Kasturi methi – 1 teaspoon

Method;

  1. Chop onion, potatoes and spinach.
  2. Mix all the spices apart from gram flour.
  3. Add the chopped onion, potatoes and spinach to spice mix. and leave to absorb for a few minutes.
  4. Add the gram flour to the mix and combine well.
  5. With your hands take the mixture and make into small balls.
  6. Deep fry until golden brown and remove for 5-7 mins.
  7. Fry the pieces again for a few minutes (this is the secret to that extra crispy batter!).

Chicken Pakora

Ingredients –

  • Chicken fillet – 1kg
  • Ginger garlic paste – 1 teaspoon
  • Red Chilli powder – 1 teaspoon
  • Salt –  to taste
  • Lemon Juice -1 whole lemon
  • Gram flour – 400gms
  • Roasted cumin seeds 1 teaspoon
  • Dry coriander – 1 teaspoon

Method;

  1. Cut the chicken into long strips.
  2. Marinate the chicken with the lemon juice and all the spices apart from gram flour and leave for as long as possible for the meat to absorb the spice mix.
  3. Add some water to the gram flour along with salt to taste and some more chilli powder if you want it spicy. Mix until a thick batter is formed.
  4. Add the marinated chicken to the batter and fry until golden brown.
  5. Remove and let to settle for 5-7 mins before frying again for a few minutes (this is where you get that extra crispy batter that tastes delicious!).
