January – the month where you make and break resolutions. A lot of you have said your going vegan for January so we’ve decided to share the recipe for one of our most popular vegan dishes.

Bhindi dopiaza – 2 servings

Ingredients

400g okra

5ml vegetable oil

100g chopped tomatoes

100g chopped onion

Teaspoon of red chilli powder, turmeric powder, cumin and coriander powder

Method

Wash the fresh okra with cold water then cut into four pieces.

Deep fry in vegetable oil and take out when it’s a little brown. Keep this separate.

Take your chopped onion and fry in oil until browned. Next, add the red chilli powder, turmeric, cumin and coriander. Sauté.

Add in the chopped tomatoes and okra. Gently fold the ingredients.

Serve with fresh chopped coriander for garnish.
